Chocolate Strawbz Slice with Ricotta Cream
Chocolate Strawbz Slice with Ricotta Cream Slice: 1-1/2 cups Self Raising Flour 2 Tbsp Cocoa ¾ cup Shredded Coconut ½ cup White Sugar ½ cup Strawbz Sauce 85 grams Butter 1 Egg, lightly beaten Ricotta Cream: 1-1/4 cup (250 grams) Ricotta Cheese ¼ cup Strawbz 2 Eggs, lightly beaten ¼ cup Icing Mixture 2 Tbsp Plain Flour 2 Tbsp Sour Cream ½ Teasp Vanilla Method: Sift together S.R. flour, cocoa and sugar. Add coconut. Into a microwave bowl pour Strawbz and butter. Microwave on medium heat for 1 minute or until butter is melted. Allow to cool slightly and beat in egg. Make a well in the centre of the dry ingredients and pour in Strawbz mixture. Stir well until combined. Press into a slice tray and bake in moderate oven for 20 minutes. Gently spread ricotta cream over base taking care not to break up the crust. Bake for further 25 minutes or till topping is slightly puffed and set. Allow to cool in pan. Refrigerate for several hours or overnight before cutting. Whilst slice base is baking prepare cream. Ricotta Cream Method: Beat all ingredients including Strawbz together in a small bowl with electric mixer until combined.
